Longjiang Pig Trotter is a famous braised specialty from Longjiang in Hailai, Jieyang, Guangdong. Fresh front trotters are blanched, then simmered for a long time in a master stock of soy sauce, rock sugar, star anise, cassia and southern ginger. The finished trotters glow a deep soy red, with soft gelatinous skin and tender meat that trembles under the chopsticks; each bite is sticky, rich and savory with a sweet edge. Locals often pour the trotter and its gravy over plain rice for a hearty trotter rice bowl, or slice it as a drinking snack. The dish depends on patient braising and a treasured aged master stock, making it one of the most down-to-earth favorites across Chaoshan streets.
