Jingdezhen
🍽️ Cold Rice Noodle
Introduction:
Thick noodles with secret sauce, a Jingdezhen specialty.
Detailed Introduction:
Cold rice noodles are a unique snack of Jingdezhen, Jiangxi. Noodles are far thicker than ordinary rice noodles, nearly half a centimeter across, steamed from rice batter, cooled, then tossed with a secret sauce of dried tangerine peel, beans, zhacai pickle, chili, soy and sesame oil for a cool, slippery bite. The thick strands are springy and chewy, the sauce savory, mildly spicy and fragrant with citrus peel. Jingdezhen locals eat them for breakfast or afternoon snacks, especially in summer. Little known beyond northeast Jiangxi, they are cherished locally and unique to the porcelain capital's streets. Visitors exploring ceramics are often directed to old alleys for an authentic bowl.
