Datong
🍽️ Datong Sliced Noodles
Introduction:
As famous as Taiyuan's, with rich gravy and unique flavor.
Detailed Introduction:
Datong sliced noodles share Shanxi's shaving tradition with Taiyuan but carry the heavier taste of northern Shanxi. Noodles are shaved into the pot and prized for their springy, chewy body; the Datong signature lies in the topping, a hearty stew of fatty mutton slices, daylily, wood ear, fried tofu and potato, rich, savory and mildly spicy. In the cold northern climate, a steaming bowl is deeply warming. Datong locals eat sliced noodles even for breakfast, and noodle shops line the streets, favoring ample broth and a robust flavor that is less vinegary than southern Shanxi. It is a common stop for visitors touring Yungang Grottoes.
