Duoduo Fen is a distinctive snack from Anshun, Guizhou, essentially a mini sour-soup hot pot. A small pot is brought to the table with a sour broth simmered from tomato, lit-spice (mujiangzi) and chili, bright and appetizing; inside bubble rice jelly, lotus-root slices, minced meat and vegetables, eaten as they cook. The name 'duoduo' refers to poking up ingredients with a small spoon. The broth is sour, spicy and fresh, the ingredients well-soaked; one pot per person or a small pot for two makes it lively and satisfying. Duoduo fen is a common affordable hot-pot-style snack on Anshun streets and night markets, priced modestly; with a bowl of rice it best conveys the everyday taste of central Guizhou's sour-soup culture.
