📍 Province: Guangdong 🏙️ City: Yangjiang
Introduction:
Older goose fried with rice, savory chewy.
Detailed Introduction:
Goose Rice is a traditional fried rice of Yangjiang, western Guangdong. The local word na refers to a female goose, and cooks choose older laying geese whose meat is firm and whose fat carries a rich aroma. Goose meat is diced, stir-fried in rendered goose fat until fragrant, then tossed with rice and scallion pieces, so each grain is separate yet coated in the savory goose fat, releasing more meaty flavor the longer you chew. The rice is oily yet not cloying, salty, savory and chewy, often served with a slow-simmered soup or plain congee. Goose raising and eating are a way of life along the Yangjiang coast, and this rice is both a farmhouse staple and a restaurant signature. A bowl is filling and warming, a hearty staple for guests in the coastal households of western Guangdong.
