🍽️ Guokui Noodle Skin

📍 Province: Shaanxi 🏙️ City: Baoji
Introduction:
Thicker spicy noodle skin than liangpi.
Detailed Introduction:
Ganmianpi, or rolled noodle skin, is a classic snack of Baoji in western Shaanxi, thicker and chewier than ordinary liangpi. Flour is washed to separate the gluten, and the skin is rolled and steamed, cut into wide strips and tossed with chili oil, vinegar and salt, served with gluten pieces and shredded cucumber. The bite is springy and elastic, with heavy chili oil and a bright vinegar tang; it can be eaten warm or cold, since warm it is supple and cold it is firmer. Baoji streets are dense with ganmianpi shops, and a bowl with a roujiamo burger or congee makes a full meal. It shares roots with Qishan ganmianpi and is the most representative wheat snack of western Guanzhong, a Shaanxi must-try for visitors to Baoji.
