🍽️ Nanan Pressed Duck
Introduction:
South-Jiangxi cured duck.
Detailed Introduction:
Nanan Pressed Duck is a traditional cured delicacy from the Nanan area of Ganzhou, Jiangxi. Local mallard-type ducks are slaughtered, salted, hung and air-dried through a winter process, becoming a representative flavor of southern Jiangxi in the cold season. The finished duck is dry, with milky-yellow skin and firm meat; cut open, it shows alternating lean and fat, salty and savory with the distinctive mellow savor of air-dried duck. It can be steamed whole and sliced cold, stir-fried with garlic sprouts and dried bamboo shoots, or layered in an assorted cured-meat steam, releasing rich aroma. Families in southern Jiangxi often make it after winter sets in, hanging it under the eaves, and serve it around the Spring Festival both for their own table and as a New Year gift to relatives and friends.
