🍽️ Roast Lamb Leg
Introduction:
Charcoal-roasted lamb leg, crisp outside juicy inside.
Detailed Introduction:
Roast Lamb Leg is a classic hearty dish of Tongliao and the Inner Mongolia grasslands, essential at festivals and feasts. A whole grassland lamb leg is marinated with onion, ginger, salt and spices, then slow-roasted over charcoal until the skin is charred, glossy and sizzling, while the meat inside stays tender, juicy and free of gamey smell. Diners carve off crisp-tender slices and dip them in salt-pepper or dry spice, savoring the contrast and strong lamb aroma. Grassland sheep, free to roam and graze on herbs, yield firm, fresh meat. Across Tongliao and Xilingol, a whole roast leg is the centerpiece of hospitality — bold and generous. On a cool grassland night with airag (mare's milk), it is the most Mongolian meal and a representative taste of grassland roast meats for visitors.
