Yulin Beef Jerky is a famous cured beef product of Yulin, Guangxi. Lean hind-leg beef from yellow cattle is cut into strips, marinated with star anise, cassia, clove and osmanthus, then roasted, air-dried and reduced in sauce until glossy dark brown. The texture is firm and chewy, the taste a balanced blend of salty and sweet with a deep spiced aroma that grows the longer you chew. It is enjoyed both as a casual snack and as a classic drinking accompaniment on Yulin tables, and also shreds nicely over congee or rice. As a renowned local product, it is often packed as a gift for friends and relatives across Guangxi and Guangdong.
