Bijie
🍽️ Weining Ham
Introduction:
Highland ham, salty and aromatic.
Detailed Introduction:
Weining Ham is produced on the Wumeng plateau in Weining, Bijie, Guizhou, and ranks among China's celebrated highland hams alongside Xuanwei and Jinhua. Hind legs of local Wujin pigs are cured, air-dried and matured in the cool, dry high-altitude climate. The finished ham has a waxy yellow rind, deep red lean meat and creamy fat, cutting with a rich, savoury aroma and a faint highland sweetness. It is sliced thin and steamed, braised with fresh bamboo shoots, or used to deepen soups. The plateau's strong sun and constant wind act as a natural curing cellar, giving this ham a representative cured-meat character of the Yunnan-Guizhou plateau.
