🍽️ Jiangkou Rice Tofu
Introduction:
Rice-tofu cubes with chili water.
Detailed Introduction:
Jiangkou Rice Tofu is a cooling snack from Jiangkou in Tongren, Guizhou, made by grinding rice into a milk and setting it into soft blocks resembling tofu. The rice milk is cooked into a paste and cooled into squares; served cut into strips or cubes, dressed with 'spicy water' of chili, soy sauce, vinegar, mashed garlic and sesame oil, and topped with scallion and fried soybeans. It is smooth, cool and tangy-spicy, one of the most popular cool foods on eastern Guizhou summer streets. Served cold with no heating, vendors cut and dress to order for passersby eating on the move. For the humid eastern-Guizhou summer, a bowl of rice tofu brings cool refreshment—a street taste locals cannot do without.
