🍽️ Jiujiang Radish Cake
Introduction:
Radish-filled rice fritter, Yangtze port snack.
Detailed Introduction:
Radish cake is a traditional snack of the Yangtze riverfront docks in Jiujiang, Jiangxi, steeped in dockside street life. A wrapper of rice batter or flour dough is filled with shredded, lightly pickled white radish, then pan-fried until golden on both sides. The crust is slightly crisp and toasty, while inside the radish strands are sweet, tender and faintly juicy, lightly salted with scallion aroma. Jiujiang rose along the Yangtze; in the past, dockworkers and boatmen bought a couple of radish cakes with congee in the morning, filling and cheap. Today it is still common at Jiujiang's morning markets, each bite bright with fresh radish, a simple, authentic folk snack along the great river.
