🍽️ Pig Trotter Noodle
Introduction:
Braised trotters over rice noodles.
Detailed Introduction:
Pig Trotter Noodle is a famous breakfast of Qinzhou on the Guangxi side of the Gulf of Tonkin. Pork trotters are slowly braised with spices until the skin is glutinous and the meat tender, rich in collagen, then chopped and poured over thick round rice noodles with a ladle of the braising stock. The noodles soak up the bone broth, while the trotter skin clings to the lips and the meat falls off the bone, savory with a gentle sweetness. Qinzhou breakfasts are meant to be substantial: a bowl of trotter noodles with a small dish of pickled vegetables is deeply filling. Unlike Nanning's sour-and-hot laoyou noodles or Liuzhou's snail noodles, trotter noodles rely on braising skill rather than chili or acid. Almost every noodle shop in Qinzhou serves them, and they are the morning energy source for fishermen and office workers alike around the bay.
