🍽️ Luoding Fish Tofu
Introduction:
Minced fish formed into tofu-like bites, tender and savory.
Detailed Introduction:
Luoding Fish Tofu is a traditional famous dish from Luoding in Yunfu, Guangdong, long served at local weddings and banquets. Fresh dace fish is scraped into a fine paste, mixed with potato starch and egg white, beaten until glutinous, then spooned into hot oil and fried into golden puffy bites. Crisp outside and tender within, they look like little golden pillows, soft, sweet and full of fish flavor, holding together even after long cooking. Fish tofu can be simmered in soup until it soaks up the broth, or braised with broccoli and shrimp as a banquet favorite. Because it is smooth and pleasing to young and old alike, it is a regular on local menus across western Guangdong and a fine example of how river fish is refined into delicate cuisine.
