Zhangjiakou

🍽️ Oat Flour Nest

📍 Province: Hebei 🏙️ City: Zhangjiakou
Introduction:
Rolled oat noodles from the plateau, served with lamb gravy.
Detailed Introduction:
Oat-flour nests are a staple of the high Bashang plateau around Zhangjiakou in Hebei Province, made from oat flour grown in the cold uplands. The flour is scalded with hot water, then each small lump is rolled by hand into a tiny open cylinder that stands on a tray like a honeycomb before steaming. The steamed nests are firm and chewy with a distinctive earthy oat aroma. Traditionally they are dipped while hot into a rich lamb gravy or mushroom broth, which fills the hollow tubes and amplifies the nutty flavor. As a hardy grain staple of China's northern frontier, it is filling and warming, and remains a daily and ceremonial favorite on local tables.
